Most of the grain used for this Millstone from the Pajarete wine cask was home-grown. The rare liqueur wine barrels from Andalusia imparted elegant sweetness and a pleasantly leathery flavour to the Single Malt from the Netherlands during the seven years of full maturation. Pajarete is a sweet, fortified wine originating in Andalusia, Spain, particularly associated with the Villamartín area in the province of Cádiz near Prado del Rey. The Zuidam Distillery was founded in 1975 by Fred van Zuidam and decided to produce exclusive whiskies matured in special casks and to make the different flavour facets accessible to connoisseurs using the 'farm to glass' principle.
