This rum, distilled from the finest molasses from the family estate on Pot Still stills, matured for the first four years on the island in former bourbon barrels. It was then transferred to second-fill rum barrels and shipped to Scotland for a further seven years to allow the Jamaican rum to mature in peace. Instead of the intense flavours of overripe fruit found in well-known "high-ester" rums, this rum takes a more complex approach. The traditional double-retort method continues to contribute to its clear and precise, yet profound flavour, which presents itself with hints of banana bread with orange and spices.
