The Mortlach 100 Proof Edition with the number #60 was bottled by Signatory Vintage. The whisky previously spent 12 long years in second fill Oloroso sherry butts, which gave the single malt a strong meatiness and spiciness with sherry and fruit flavours. In the series, all whiskies are bottled at 100 proof, which corresponds to 57.1% vol. The "proof" system was first introduced in Great Britain to determine whether a spirit was high enough in proof to be taxed and to ensure that gunpowder on ships could still be ignited in rough seas. A mixture of spirits and gunpowder had to be able to ignite. Today, this measure is rarely used but has been revived by the independent bottler Signatory Vintage for the 100 Proof Edition. The Mortlach distillery was the first of Dufftown’s famous seven distilleries. The distillery was also the first legal distillery in the town, which is quite a distinction, especially when we consider the impressive amount of illicit activity that was occurring around the site at that time.
