Warehouse No. 1 NYE/WK White Overproof Rum is an unaged rum from the New Yarmouth Distillery in Jamaica. It is distilled from molasses using the Pot Still process and belongs to the category of so-called high ester rums. The designation "NYE/WK" refers to a specific brand within the distillery, whose ester content is around 900-1,000 g/hlpa (grams per hectolitre of pure alcohol). This chemical composition ensures a pronounced flavour density, but remains below the extreme concentrations of the DOK category. The rum is not stored in barrels, but is bottled directly after distillation with an alcohol content of around 63% vol. It therefore retains its full, distillative profile without the influence of wood maturation and reflects the fermentation and distillation technique of the New Yarmouth Distillery in its purest form. The New Yarmouth Distillery is located in Clarendon, Jamaica, and is known for producing rums with different ester profiles. It is owned by the J. Wray & Nephew Group and also produces ingredients for well-known brands such as Wray & Nephew White Overproof. NYE/WK bottling is not usually produced for commercial retail, but is mainly used in the independent bottling scene and in specialist circles. Bottled under the Warehouse No. 1 brand, this rum has been made available not only to professional mixologists, but also to curious amateur bartenders.
Due to its high alcohol content and intense flavour profile, this rum is primarily suitable for use in the bar, especially in classic tiki and tropical cocktails.
